It’s fall, officially. Don’t let the heat confuse you.
Apples are everywhere. I am reminded just how good in-season apples are compared to the other times of the year. Their scent is just intoxicating. So “fall”.
I’ve always wanted to try stuffed apples and after a lengthy search, I found a recipe that was close to what I was craving. Warm apple filled with oatmeal, little bit of cinnamon and a touch of sweetness makes a winning combination in my book. And a dollop of real whipping cream is the creme de la creme
Baked Apples with Oatmeal and Brown Sugar

- 1 lemon, cut in half (approximately 1/4 cup of lemon juice works too)
- 4 large red apples
- 3/4 cup honey
- 1 teaspoon cinnamon
- 4 teaspoons butter
- 1 cup oatmeal
- 2 tablespoons brown sugar
- Whipped cream , optional
In large bowl, combine the squeezed lemon juice with 2 cups of cold water.
Using a small knife and working from the top of each apples, carve out a large bowl, about 2 inches in diameter. Make sure to remove the core but leave the bottom of the apple intact. Place the carved apples in the lemon water and save the cut-away apple pieces.
After removing any core parts and seeds, chop the cut-away apples into small chunks. Toss the chopped apples with 3 tablespoons honey and cinnamon and set aside.
Combine the remaining 9 tablespoons honey with a 1/2 cup hot water and stir until well blended.
Remove the apples from the lemon water and stand them, bowl side up, in a 9″ x 9″ shallow baking dish. I used a glass Pyrex dish lined with foil.
Place 1 teaspoon butter in bowl of each apple and pour honey and water mixture on top. Cover dish with foil and bake until tender, about 25-35 minutes
While the apples bake, bring 1 3/4 cups water and a pinch of salt to a boil in a medium saucepan. Add in the oatmeal and apple pieces/honey/cinnamon mix. Stir until mixture returns to a boil, then reduce heat and cover. Cook until tender, 7-10 minutes. Remove from heat.
Remove apples from oven and carefully fill with the oatmeal mixture. Sprinkle the tops with brown sugar. Place the dish under the broiler for about a minute, just until the brown sugar is bubbly and darkened
Serve with whipped cream, if desired.
Maybe a little dusting of cinnamon too.
