Day 17 with Mandy’s Recipe Box

Hey there! I am very excited to be here today for the 25 Days of Cookies. I’m Mandy from Mandy’s Recipe Box. I am a wife and mother of 3 kids, 2 girls ages 9 and 3 and a boy age 7. I was a city girl through and through until I met and married a farmer. I’ve since been converted to country girl where we live in the Middle of Nowhere, Idaho and love it. I enjoy baking and cooking up all kinds of goodies for my family and all who stop by my blog. Be sure to visit me on Facebook as well.
Today I am sharing a favorite Christmas cookie of mine, Crescent Cookies. I hope you like them!
1 c. butter. softened
1/2 c. powdered sugar
1 tsp. vanilla extract
1 3/4 c. all-purpose flour
1 c. finely chopped pecans
Garnish: additional powdered sugar
In a bowl, blend butter and sugar with an electric mixer on medium speed until smooth. Beat in vanilla. Gradually add flour with mixer on low speed. Add in the pecans. Place in the fridge about 30 minutes until dough is easy to handle. Shape into crescents by tablespoonfuls. Place onto baking sheet (I coated mine with Pam). Bake at 275 degrees for 38-40 minutes. Cool slightly, then roll in additional powdered sugar. Put on wire racks to cool completely.
Makes about 4 dozen.
