Some people are not natural born campers. One of those people is me. So instead, we go pseudo camping.
Pseudo camping, meaning not actually but having the appearance of camping, is when individuals go to a campground in which friends or family are actually camping in. They hang out, chit chat, laugh, pretend like they belong, eat food, enjoy the campfire and go home to shower, sleep in their own beds and enjoy their air conditioning.
This is the kind of camping I can handle.
Last weekend, we joined our friends at Lake Elmo and despite the dampish weather, we had a grand time. We saw a wildlife presentation at a beautiful outdoor venue, photo shared here.
On our way back to our site, J wanted to try a drink from the drinking fountain like everyone else. Then he changed his mind.
Love Bug had the time of her life with a new little acquaintance and her family’s beautiful camper. She could hardly be bothered to stop when I asked to snap of picture of her halo of curls. This is her cooperating.
This is when I said it was time to roast marshmallows.
It’s the little things.
I brought along a sweet treat to share with the group. It’s a basic recipe with a few changes. Microwave time instead of stove top, cornflakes instead of Rice Krispies, Reese’s Pieces candy instead of a chocolate topping.
You’ve probably made a version of this before. Stir together sugar and light corn syrup.
Microwave the bowl for between a minute and a half and two, just to bring the mix to a boil. Stir in the peanut butter.
In go the cornflakes.
Then the Reese’s Pieces.
Pour the combination in a greased pan.
If you’re going camping, cut into bars and share with friends.
If not, don’t bother to wait. Grab a fork and go at it.
Ingredients
- 1 cup sugar
- 1 cup light corn syrup
- 1 cup peanut butter
- 6 cups cornflakes
- 7.5oz Reese's Pieces candy (half of a 15oz bag)
Instructions
- Stir together the sugar and corn syrup in a large bowl.
- Microwave the mix between 1:30-2:00 minutes to bring the mix to a boil. (Do not over cook or the bar will set very, very hard.)
- Add in the peanut butter and fully incorporate before adding in the cornflakes.
- Gently but thoroughly cover the cornflakes.
- Finally, add in the candy bits.
- Dump the mix into a greased 9x13 pan.
- Eat warm with a fork or wait until they set and cut into bars.
