More Golden Birthday Dinner food.
A meal is not complete without a vegetable in my opinion. I was looking for an easy, colorful and tasty recipe and this mix of carrots and zucchini came to mind. It is SO.EASY! And it is cooked and ready to serve in under 10 minutes.
There are two ways to prep the veggies. The carrots and zucchini can be cut down into 1/4 inch thick, 2 inch long matchsticks. It’s a lovely presentation but the prep rather time consuming. The other method is using a food processor and the large shredding disk. This was my method. It’s so quick and easy and when one is cooking for lots of people, it’s a total time saver.
The veggies are tossed into hot oil, carrots first followed by the zucchini and seasoning, and they cook in a flash. It’s so simple but tasty. The non-veggie eater at the party even liked them. Well, he would have liked them if he tried them I am sure of it. :)
Ingredients
- • 1 lb zucchini
- • 3/4 lb carrots
- • 3 Tbsp corn, peanut or vegetable oil
- • 3/4 tsp salt, or to taste
- • 1/2 sugar
Instructions
- Cut zucchini and carrots in one of two ways - 1. Cut into 1/4 inch thick, 2 inch long matchsticks or 2. With a large shredding disk, use a food processor to shred both
- Heat a work or large skilley until a bead of water immediately evaporates.
- Add oil and heat about 30 seconds.
- Add carrots and stir fry to coat with oil.
- Cover and cook 2-3 minutes.
- Add zucchini, salt and sugar.
- Stir fry uncovered another minute or until heated through.
