Creamy Sausage and Tomato Pasta

Happy Friday.

I’m still not done with my stenciling yet (boo) but I have a couple other posts to pass along while I finish up. Hopefully by the end of today the kitchen will be done. (cross my crippled fingers)

A couple of weeks ago, I found this Creamy Sausage and Tomato Pasta recipe on The Girl Who Ate Everything. I had high hopes that this recipe would like a dish I enjoy from Noodles & Company and I was not disappointed. It’s wonderful. I made it three times last month.

I have a couple modifications, nothing too extensive because it’s sublime.

– I think using the entire 16oz box of penne pasta works fine. There is plenty of sauce to cover them all and then you aren’t left with a partial box.

– To add a bit of warmth/spicy-ness to the dish, sprinkle on some red pepper flakes. Because Love Bug shares this dish with us, MJ and I do our sprinkling on a bowl-by-bowl basis.

Creamy Sausage and Tomato Pasta
recipe from The Girl Who Ate Everything

4-5 Italian sausages – I used mild Italian sausage, cooked and thinly sliced
1 cup chopped onion
3 cloves garlic, minced
1 – 16 oz can Italian style diced tomatoes
1 – 8 oz can tomato sauce
1 cup heavy cream
5-6 fresh basil leaves, chopped
16 oz penne pasta
red pepper flakes (optional)
grated Parmesan for topping

Directions:

Brown the sausage, according to the package directions, and then thinly slice them.

Add the chopped onion and the garlic to the sausages and saute for a couple of minutes, until the onions are transparent.

Pour in the entire can of diced tomatoes and tomato sauce and heat through.

Add in the cream and heat through. The longer the cream cooks, the thicker the sauce will be so simmer until you are satisfied with the consistency.

Add in the fresh basil leaves and let it simmer a few minutes more.

While mixing up the sauce, cook the pasta according to package directions. I always try to time it so the noodles get down right around the same time that the sauce is complete.

Mix the tomato/sausage sauce with the pasta and serve. Top with Parmesan cheese.
