Day 14 with this heArt of mine
Whew! We are over halfway through this sugar-fest, are you enjoying it? I sure am! And I am so thankful for all my guest bloggers and their willingness to participate. Keep stopping in because there are still plenty more sweet things to come.
I’m up today.
As I’ve mentioned before, I thoroughly enjoy Nutella, the original chocolate, hazelnut spread. I’ve gushed about Nutella buttercream frosting and Nutella hot chocolate, so Nutella Hazelnut cookies seemed like an apropos addition for our Christmas cookie repertoire and these 25 days.
These babes are Nutella-y and chewy, with a nice nutty crunch. Delicious but not too sweet. After I finished this photo shoot, I promptly ate at least four by myself. Would have finished them all had MJ not bothered me.
Nutella Hazelnut Cookies
recipe from Cuisine at home
Makes two dozen – 3 inch cookies
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp table salt
- 1 stick unsalted butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 1 cup Nutella
- 1 tsp vanilla
- Finely chopped hazelnuts
Whisk together the flour, cocoa powder, baking soda and salt in a bowl, then set aside.
In the bowl of a mixer, beat butter and sugar at medium speed for 5 minutes. Add the eggs in, one at a time, beating to fully incorporate before adding in the next one. Add Nutella and vanilla and beat until combined.
Add in flour mixture and mix just until combined.
Chill dough 4 hours or overnight.
To make cookies, preheat the oven to 350° and line baking sheets with parchment paper.
Scoop into balls, a scant 3 Tablespoon size or a #30 scoop. Roll in hazelnuts. To get the hazelnuts to adhere well to the chilled dough, press them firmly into the balls with your hands.
Bake the cookies six at a time because they will spread. Bake until the edges are set, about 15 minutes. For chewy centers and crisp edges, remove the cookies from the oven when the centers look underdone.
Allow cookies to cool on the baking sheets.
