Chocolate Crinkle Cookies

My name is Kristin and I’m the blogger behind the stove, sneakers and passport stamps at Iowa Girl Eats, where I write about cooking, eating, running, eating, traveling, and – you guessed it – eating! :)
The festive decorations, joyful music, and extra time spent with family and friends are just a few of the reasons why the holidays are my favorite time of year. Indulging in special, once-a-year goodies like Christmas cookies is definitely another!
While I’d never turn down an iced sugar, jam thumbprint or peanut blossom cookie, I hold a special place in my heart for Chocolate Crinkle Cookies – gooey chocolate cookies rolled in powdered sugar and baked until crackled on top. They’re my absolute favorite!
Each bite of this deep chocolaty treat is Heaven. The outside is sweet and pure, while the inside is decadent and rich. They just scream Christmas! to me – maybe it’s because they look like a chocolate snowballs!
Not only do these cookies taste incredible, they’re totally easy to make too. Simply cream together cocoa, vegetable oil, sugar, eggs and vanilla, then mix in flour, baking powder and salt.
Refrigerate the dough for at least 4 hours, or overnight, (trust me, these babies are worth the wait) then roll 1 Tablespoon worth of dough into a ball and roll in powdered sugar.
Bake for 8-10 minutes, and voila!
The insides of these cookies are dense like fudge, which I just can’t get enough of. They a total crowd pleaser whenever I take them to get togethers too. I hope you enjoy!
Chocolate Crinkle Cookies

Makes 18 cookies
Ingredients:
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup vegetable oil
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup powdered sugar
Directions:
1. In the bowl of a mixer (or in a medium-sized bowl) beat together cocoa, sugar, vanilla and vegetable oil. Beat in eggs, one at a time, until mixture is smooth. In a separate bowl, sift together flour, baking powder and salt. Mix into wet ingredients in 3 batches, mixing until just combined in between each batch. Cover the dough and chill for at least 4 hours, or overnight.
2. Preheat oven to 350 degrees. Scoop out 1 Tablespoon dough, roll it into a ball between your palms and roll in powdered sugar. Place on a non-stick sprayed, or parchment paper lined, baking sheet and bake for 8-10 minutes. Let cookies cool on the baking sheet for 2-3 minutes before removing to a cooling rack.
