Day 25: Frosted Cashew Cookies

Merry Christmas!!

Let’s make this quick, I’ve got presents to play with! Okay, my children have presents to play with but I want to watch ’em. :)

Thanks to the help of MJ’s mom, I’m sharing a Frosted Cashew Cookie today. It’s chewy and nutty and, thanks to a wonderful browned butter frosting, they are irresistible.

Frosted Cashew Cookies

  • 1 stick softened butter
  • 1 cup brown sugar
  • 1 egg
  • 1/3 cup sour cream
  • 1/2 tsp vanilla
  • 2 cup flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 3/4 cup salted cashew halves or whole cashews chopped

Cream butter and sugar together. Add in egg, sour cream and vanilla. Then add in flour, baking powder and baking soda. Finally, mix in cashew halves.

Drop by scoopful on lightly greased cookie sheet.

Bake at 375° for 8-10 minutes, until lightly browned.

Browned Butter Frosting:

Brown 1 stick of butter. Need help?

Add in:

  • 3 Tbsp cream
  • 1/4 tsp vanilla

Using a hand mixer, beat in:

  • 2 cups powdered sugar

I added in a little extra cream to get the frosting to the consistency that I liked.
