Day 6 with Pressed Down, Shaken Together

First … thanks so much, Amy, for inviting me to guest post in your 25 Days of Cookies series!! Hello all you this heart of mine readers and fans!! My name is Keri and I blog over at pressed down, shaken together … my little corner of the world where I share all sorts of DIY crafty and tasty stuff :) I am a mom, wife, blogger, reader and lover of vocabulary, lists, reality tv and exclamation points!!
Today, I thought it would be fun to share an “everything but the kitchen sink” type cookie that is pretty easy to whip up with whatever you might have in your pantry …
Cup of Everything Cookies
Preheat oven to 350* F. In a large mixing bowl, cream together:
1 cup each:
- butter, softened/room temperature
- brown sugar, packed
- granulated sugar
Mix in 3 eggs and 1 tablespoon baking soda then add 1 cup each of the following:
- flour
- peanut butter
- shredded coconut
- chocolate chips
- oats
- raisins
- pecans
Mix well and drop by rounded tablespoons about 2 inches apart on a cookie sheet. I didn’t grease the cookie sheets and thanks to the peanut butter, the cookies came off easily when slightly cooled. This recipe yields about 3 dozen cookies.
You can add your own favorites … like dried cranberries instead of raisins or butterscotch chips instead of chocolate chips! I’m thinking about M&Ms, Heath pieces, Reeses pieces … the possibilities are pretty much endless! Since I didn’t have raisins or nuts on hand, I omitted them completely and the cookies still came out delicious!
These cookies are crispy at the edges and soft and chewy in the middle and are pretty perfect for Santa or just with a cold glass of milk!
