Dilly Cucumbers

These are cucumbers for those who sometimes struggle telling the difference between garden produce (ahem….me). The ones above are specifically pickling cucumbers but any variation will do.

So, if you have a couple (or want to pick up some at the store), here is a quick, easy, taste-bud tickling recipe.

Dilly Cucumbers
recipe from A. Simpson

2 medium cucumbers – sliced 1/8 inch thick
1 Tbsp kosher salt
½ cup white vinegar
¼ cup snipped fresh dill
3 Tbsp sugar
½ tsp ground pepper

In a collander, sprinkle the salt over the sliced cucumbers. Let it sit for 15 minutes, stirring twice. Rinse and drain well.

Combine the vinegar, fresh dill, sugar and ground pepper and add in cucumbers. Refrigerate for at least 15 minutes before serving.

Pucker up. : )
