When I was younger, I had an aversion to cheese. I wasn’t allergic or sensitive to dairy or anything. No. I just thought almost all cheese was gross. I could handle it on pizza and in omelets but only if the cheese was sparse. I avoided all globs. The only cheese I would eat with crackers was Colby jack and it had to be from-the-fridge cold. Warm cheese really wigged me out. Even today, room temp cheese is pushing the ew factor for me.

However, I did grow up and my love for cheese grew as well. Then, as life would have it, I married a cheese head from Wisconsin thus ensuring cheese would always be in my fridge. Cheese is a frequent meal ingredient on our menu and it’s one of my go-tos for the endless number of snacks I have to supply.

Because we are moving-all-the-time people, I try to provide quality food so we have the energy we need to make it through the day. MJ and I talk to the children about how good food helps our bones, teeth, muscles and brains. It’s more to inform them why donuts are not an acceptable food for all meals. With cheese like Alpine Lace Swiss, we get something that not only tastes good but is a source of protein and calcium.  I love adding cheese to our scrambled eggs veggie bowls. Using the Swiss, I sauteed onions, green peppers and mushrooms with garlic and added eggs. It was delish.

When we aren’t mixing cheese into things, we are eating it straight from the package. A new favorite treat of ours, shared by a friend, is slicing cheese into small squares, drizzling it with just a bit of very light olive oil and sprinkling it with sea salt. My friend used truffle salt. So, so good.

Since life isn’t slowing down anytime soon, we have to take care of ourselves. And a way to do that is to eat well. There are times I wish I could find ‘slow down’ foods or ‘sleep’ foods for my children. There are day I could really need it. However, I know they are getting what they need for their growing bodies when they still have energy, well, all the time. :) And I know I’m doing pretty great when I can keep up.
