Falling into Fall: Apple Pancakes

I told you yesterday that I have been more interested in messing around in the kitchen now that the weather has cooled a bit. And ideas hit me at weird times. With the schlepping to preschool and back (and preschool and back again) each day, the drive time has given me a small break to think quietly. While not all thoughts are creative/project/food related, apple pancakes was one and I went with it.

After marking up the pancake recipe we use at home, I Googled apple pancakes to see if my plans were relative to others online. Yes they were. But then I saw the Smitten Kitchen recipe and saw in her notes that her recipe was a pretty basic one and she encouraged adding in spices to make it better. So I abandoned my list in favor of tinkering with spices.

Using our favorite apple cake recipe as a guide, I added vanilla, cinnamon, nutmeg, cloves and a squeeze of lemon to brighten the flavors. I used buttermilk instead of plain milk and for the apples, I used a couple of gigantic Honey Crisp ones from our apple orchard excursion two weekends ago.

They smell like a fall morning to me. With their aroma, I was actually transported back to my childhood home, sitting at the breakfast table, thinking about what I needed to wear to school and if my practice clothes were packed. It was a little strange. :)

Apple Pancakes

Recipe modified from Smitten Kitchen

Ingredients

  • 2 eggs, beaten
  • 1 1/2 cups buttermilk
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 3 medium apples, peeled and coarsely chopped/grated
  • 1 tsp vanilla
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of cloves
  • juice from half of a lemon, squeezed

Instructions

  1. In a large bowl, whisk together the eggs, buttermilk, vanilla and lemon juice.
  2. In a separate bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, nutmeg and cloves.
  3. Add the dry ingredients to the wet ingredients and stir in the apples.
  4. Heat a large pan over medium heat. Using a 1/4 cup, scoop out batter and pour onto the pan, spreading out the batter just a bit to help it cook more evenly.
  5. Cook until the edges have firmed up and it is a nice golden brown.
  6. Flip and repeat on the other side.
  7. Top with whatever you prefer.
