It’s Iowa Girl Eats today for Day 11. Kristin is from my lovely home state so I have a special spot from her blog, Iowa Girl Eats. And a delicious special spot it is. Kristin beautifully documents her various and numerous recipes while also sharing running/workout tips (she’s a runner!!) and travel experiences. With her extensive recipe box, I really had a hard time choosing just a few. However, these ones really peaked my interest: Best-Ever Black Bean Soup with Cilantro-Lime Rice, Almond-Crusted Warm Goat Cheese Spinach Salad with Cherries, Sweet Potato Fries, Roasted Tomato Soup with Grilled Cheese Croutons, Red Velvet Cake Balls and Mini Turtle Brownies. Christmas is hands down my favorite time of the year. The festive decorations, powdery snow (if only in my dreams – it’s been in the 50s and 60s here lately!) goodwill attitude, and cheery music pretty much guarantees that a perma smile is plastered across my face all month long.
Every year on Christmas morning my brothers and I wake up at our respective houses, then slowly trickle into my parent’s place to begin the festivities. Sipping champagne mimosas by a roaring fire, opening gift after gift, youngest to oldest, until it’s hard to see the person next to you amongst all the ripped and torn paper! Usually we’ll nibble on warm cinnamon rolls, or a hot breakfast casserole throughout the morning until my Mom serves up the big, Christmas ham dinner.
One of our go-to holiday breakfasts as of late though, is this Crock-Pot Breakfast Casserole. It’s so incredibly easy to prepare, and a total crowd-pleaser.
Just layer frozen hash browns, cooked breakfast sausage, eggs, and shredded cheese in a crock pot, then let ‘er rip. Perfect for throwing together early on Christmas morning, then cooking on high for 4 hours while everyone gets up and at ’em, or cooking low and slow for 8 hours overnight if the gang’s getting started early.

Ingredients
- • 30oz bag frozen hash browns
- • 1lb sausage, browned & drained
- • 8oz shredded cheddar cheese
- • 8oz shredded mozzarella cheese
- • 6 green onions, sliced and divided in half
- • 12 eggs
- • 1/2 cup milk
- • 1/2 teaspoon salt
- • 1/4 teaspoon pepper
Instructions
- Spray a large crock pot with non-stick spray then place half the hash browns into the bottom. Layer in half the cooked sausage, half the cheeses, and half the green onions, then repeat hash brown, sausage, and cheese layers.
- In a large bowl, whisk together eggs, milk, salt, and pepper, then drizzle over top.
- Cook on high for 4 hours, or low for 8 hours, or until eggs are set.
- Serve with remaining green onions, salsa, or guacamole.
