Homemade for the Holidays: Merry Berry Salad

Welcome to Day One of Homemade for the Holidays! (I decorated, did you notice?)

I hope you brought your appetite. There are going to be delicious recipes about these parts every week day until Christmas. With the help of some lovely food blogging friends, we are going to dazzle your taste buds until December 25th. Mmmmmm!

With it’s perfectly applicable name, Merry Berry Salad is the first one up. One of my mom’s dear friends shared this gem with her a few years ago. It’s a salad that can be eaten any time of the year but I mostly think of it at this time because of the real cranberries used in the dressing. The whole salad is a unique blend of flavors and the cranberry color makes it so festive.

Crisp red and green apples, shredded Parmesan, dried cranberries and toasted almonds are added to mixed greens and topped with a cranberry dressing. I used my behemoth food processor to blend the dressing because I demolished my blender. Either machine will do the job. All the dressing ingredients are processed together first and then, while it’s still processing, the oil is slowly added in. This helps the oil meld better with the non-oil item though the dressing still might require a few shakes before pouring.

Merry Berry Salad

Ingredients

    Salad:
  • 1-10oz package mixed salad greens
  • 1 medium red apple, diced
  • 1 green apple, diced
  • 1 cup shredded parmesan
  • 1/2 cup dried cranberries
  • 1/2 cup silvered almonds, toasted
  • Dressing:
  • 1 cup cranberries
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/4 cup apple juice concentrate
  • 1 tsp salt
  • 1 tsp ground mustard
  • 1 tsp grated onion
  • 1 cup vegetable oil

Instructions

  1. In a food processor or blender combine all the ingredients except the oil. Process until smooth.
  2. With the machine running, add oil in a steady stream.
  3. Drizzle over salad just before serving.
  4. Refrigerate left over dressing. (Shake reserved dressing well before using.)
