Lime Ice

While making our way through the zoo on Tuesday, we started seeing people holding a name brand lemon ice dessert. Wow, did that sound good! MJ must have thought the same thing because he mentioned it and suggested we get some for ourselves. Then we checked the price and deemed it not worth the cash (because we’re cheap). I remembered the recipe I posted last summer and promised to make a batch at home. Homemade always wins when it’s made for less money and tastes better!

We didn’t feel like doing much upon returning home on Tuesday and by Wednesday, I wanted to modify it a little. Instead of lemon, I wanted to try lime because I heart lime-y things.

I’m sure others out there have already made the leap from lemon to lime but below is what I did and what I learned making Lime Ice for our house. It’s cool. It’s refreshing. And it’s lime-y loveliness.

Lime Ice

3 cups water
1 cup sugar
3/4-1 cup freshly squeezed lime juice*
1 Tbsp grated lime zest

*I made two batches – one with 1 cup lime juice, another with 3/4 cup. Lime juice can have a bitter aftertaste if it isn’t balanced out with sweet and that’s what happened with the full cup batch. It could have been the first batch of limes or the zested rind, I’m not sure. So, pick your preference pucker.

1. Mix water and sugar in a saucepan and bring to a boil over high heat. Boil uncovered, stirring occasionally, for 5 minutes or until the sugar is dissolved.

2. Remove from heat and stir in lime juice and lime zest.

3. Pour into a 9×13 baking pan. Freeze 1 hour, then stir. Cover and freeze two hours or overnight until firm.

To serve, scoop into cups and enjoy.
