We are traveling this week, the children and me. I taught book making while the children stayed with my mom. Now I’ve joined them and we are hanging in Iowa for the next few days. I feel like I blinked and May is through. Love Bug is done with preschool so ‘summer’ has arrived and Memorial Day is Monday already. This holiday always feels to me like the gateway to summertime. There is grilling and picnicking and, if it’s warm enough, water play. I’ve rounded up a few recipes from the archives that are perfect for this weekend. Or any weekend. Or weeknight or weekday.
Roasted Corn on the Cob – A simple and simply delicious way to eat corn on the cob.
Lemonade Slushies – A fun, icy twist on plain, old lemonade.
Grilled Sweet Potatoes – Perfect side to a burger with cheese.
BBQ-y Beef Cups – All the barbeque, meaty goodness inside a biscuit cup.
Yogurt Pie – Because it’s cool, refreshing and the yogurt makes it healthy. :)
And finally, 4-Layer Pudding Dessert. – It’s also cool and refreshing and downright amazing.
I vote the weekend starts today.
