The other night I dug through my recipe box for something sweet to make and came across a recipe for Peanut Butter Fingers. I’d never made it, don’t remember eating it and don’t remember requesting the recipe either. But I read it over – butter, sugar, peanut butter, oatmeal and chocolate. Sounded like a good combo.
The recipe said it was from my mom so I called her up to ask if she could tell me a bit about the bars.
She said it sounded delicious but had no recollection of the recipe at all.
I told her the directions were written in her hand-writting.
Nope. No memory.
I told her there is even an ingredient suggestion written in by her.
Still nothing.
Maybe genetics are to blame for these memory shortfalls??
I went ahead with the bars anyway.
Glad I did. Chewy, peanut buttery with a bit-o-chocolate.
Peanut Butter Fingers
recipe “from my mom”
Cream together:
1 cup softened butter
1 cup sugar
1 cup brown sugar
Add:
2 eggs
2/3 cup peanut butter
Stir in:
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
2 cups flour
2 cups oatmeal
Spread batter in a 9×13 pan and bake at 350 for 20 minutes
Immediately when you remove the pan from the over, sprinkle:
12 ounces milk or semi chocolate chips (or a combination of both) over the top
Blend together:
1 cup powder sugar
1/4 cup peanut butter
2 to 4 Tbsp milk
Spread over melted chocolate chips
Cool, cut and serve.
I think the cooling part is optional. : )
*In the pictures, I was going for artistic not appropriate portion size. Lets be real. You would need to eat like 10 of those little squares to get the good sugar fill.
