Sometimes, a rainbow cake is just the thing to do. The plan came to me out of nowhere but immediately I knew Bug and J would enjoy it. It is cake, colored the tones of the rainbow, covered in frosting. What is not to like?! We used the directions from I Am Baker, queen of baked goods and fellow Minnesotan. Ours is not as perfect as hers but it’s not too shabby and tastes pretty good. J and Bug helped mix up the cake batter and then lent their stirring skills to mixing in the purple and blue tones, their “favorite colors”. I mixed up the the second set of cakes after they went to bed.
I used a vanilla frosting we use every time vanilla frosting is needed from the Magnolia Bakery. I think it needs some tweaking. When I get it right, I’ll share. I barely had enough frosting to cover the six layers but I made it work.
Both children have since requested a rainbow cake for their next birthdays, nine to ten months away. We’ll see how many times this request changes. Guess it depends on how many other cakes I make between now because the current cake usually becomes the favorite. :)
