After the two marshmallow recipes yesterday, the whole kit and sticky caboodle is up today. It’s s’mores day! And not just one s’more but three of them – Chocolate Loves, Peanut Butter and Caramel Cashew. These recipe creations have been swimming around in my head for a long while and it was so fun to finally put them together.
The Peanut Butter s’more came about after ‘camping’ with friends last summer. I say ‘camping’ because I don’t actually camp. MJ, the children and I spend an afternoon and evening with friends of ours at their campsite. We get to do camping things like cook and eat outside, sit around a campfire and roast marshmallows and then we return to the air-conditioned, bug-free sanctuary that is our home and sleep in our beds. It’s a win-win. Anywho, last summer I brought a bag of peanut butter cups along and used them in our s’mores. Loved it. Over the winter, the peanut butter marshmallow part came to life and completed it. It’s very sweet and lusciously peanut buttery. The homemade peanut butter marshmallows do melt differently than the store-bought kind which only really matters when the sticky drips land on your gas stove top and smoke. :)
Chocolate Lovers is mine too because sometimes a chocolate overload is called for. Chocolate graham crackers, chocolate marshmallows and a chocolate bar. Sweet indulgence.
The final s’more is the Caramel Cashew and it’s one that MJ and I worked on together. He’s not a big fan of chocolate, especially melty chocolate. I’m not sure what his problem is, I’m getting him tested. However, he does like caramel. After perusing so.many.s’more.recipes, I saw one image incorporating caramels with the marshmallows (first the caramels are skewered and then the marshmallows are skewered and pressed down around the caramels, encasing them). I took that to him and asked what he thought would make a good pairing. After a short moment, he said cashews. But handful of cashews weren’t going to sit nicely on a cracker so I processed them with my food processor to make a cashew butter/paste. That I could spread on the cracker and then top with the roasted mallows and caramels. It’s wonderful. Not overly sweet but salty sweet and good.

Ingredients
- chocolate graham crackers
- chocolate marshmallows
- chocolate bar
- chocolate or regular graham crackers
- peanut butter marshmallows
- peanut butter cup
- graham crackers
- marshmallows
- caramels
- cashew spread (process cashews in a food processor until a spreadable paste forms)
Instructions
- Lay out the crackers.
- Place the non-marshmallow items on the crackers. Spread the cashew spread.
- Roast the marshmallows to your preference. (For the caramel cashew, skewer the caramels first and then skewer the marshmallow, pressing the marshmallow down and around the caramels.)
- Press the marshmallows on the cracker stack with the second cracker.
- Enjoy.
Notes
For the Caramel Cashew, I recommend to warm the caramels a little first before adding the marshmallows to make sure they get soft.

Gosh these smores look good! I don’t think I’ve ever seen chocolate graham crackers before. I’m on the lookout for them now. Fun and gorgeous post. ;)
