It’s Monday. A perfect day for a decadent sweet.

I think I could completely get used to being served breakfast in bed each morning. :) At this point in my life, I dream about opening my eyes in the morning after getting my fill of continuous deep sleep. Sleep so deep that it’s kind of hard to get out. You know, the kind when your face is a mess of creases from laying on your face in the same spot for a long time. So good. In my dream, there is a tray filled with a lovely breakfast ready and waiting when I wake. I can eat at my leisure, maybe even read a real paper newspaper or watch a morning show. Amazing. And afterwards, someone else takes care of clean up. Until that happens, I’ll keep dreaming.

This Almond Coffee Cake is the perfect decadent treat for breakfast in bed. If that isn’t in the cards, eating it just about anywhere else is perfect too. Whether it’s on a cake stand or paper plate, properly cut into equal slices or devoured bit by bit by a famished mob, this cake fits.

It’s flaky yet dense, buttery with a crispy sugary top. And almond flavoring has always been one of my favorite.

My grandma brought this cake to our last family gathering. Which is often the case, there were far too many people for one small cake. I made and brought it with us when we visited MJ’s family this weekend and it didn’t make it through the morning. Every last crumb was gone.

My advice to you – make lots!

Almond Coffee Cake

Ingredients

  • • 1 1/2 sticks of butter, melted
  • • 1 1/2 cups sugar
  • • 2 eggs
  • • 1/2 tsp vanilla
  • • 3 tsp almond extract
  • • 1 1/2 cups flour
  • • Pinch of salt
  • • Sugar for sprinkling
  • • Almond slivers for decoration

Instructions

  1. Line a 9" round cake pan with foil and grease it. (A 10" cast iron pan lined with foil also works.)
  2. Stir together all the ingredients together and mix until just combined.
  3. Spread batter into the prepared pan
  4. Sprinkle with sugar and almond slivers.
  5. Bake at 350F for 30-35 minutes or until golden brown.
  6. Remove from pan and cool 5 minutes before serving.
