To be honest, there are times I can convince myself I would be happy staying inside my home indefinitely. Keeping it simple, hanging out where I’m comfortable, never trying anything new or seeing anything new, sticking with what I know, same old, same old. Not because I shun ‘new’ but because it seems easier sometimes. And because I’m tired a lot of the time. However, it’s foods like this caramelized onion and pork crostini that remind me if I were to stay in indefinitely, I would be missing a lot. These crostini pack a flavorful punch. Roasted pork tenderloin, garlicky mustardy mayo, caramelized onions (my fave!) and an Italian blend of cheeses. My friend served them for New Year’s Eve and they won me over.

I view the recipe below as more guideline rather than law. Not everyone feels that liberty and that’s okay. Here’s what I mean. Baguettes come in a variety of sizes. Onions too. You can purchased a pork tenderloin for about the same price as an entire pork loin. So, in my opinion, these crostinis can be small appetizer size or can be larger, more main-course-like. Just make it. I promise anyway you serve them, caramelized onion and pork crostini will hit the spot.

Caramelized Onion & Pork Crostini

Ingredients

  • • pork tenderloin, 2lb
  • • olive oil, salt and pepper - rub
  • • baguette
  • • 3/4 cup mayonnaise
  • • 1 tbsp minced garlic
  • • 1 tbsp Dijon mustard
  • • 2-3 onions, thinly sliced
  • • olive oil, salt and pepper to cook onions
  • • 2 cups Italian mix cheese

Instructions

  1. Rub tenderloin with olive oil, salt and pepper.
  2. Sear the outside of tenderloin in a pan over medium-high heat.
  3. Roast the tenderloin at 350F. Cool and thinly slice.
  4. Slice baguette and brush or spray with olive oil. Place bread under broiler until lightly browned.
  5. Mix together the mayonnaise, garlic and Dijon mustard.
  6. Thinly slice the onions.
  7. To caramelize, cook slowly in a pan over medium-low heat with olive oil, salt and pepper. Stir often.
  8. Spread the mayo mix on the sliced and toasted bread. Top with a slice (or two) of the tenderloin. Add some caramelized onion and finish with the Italian cheese mix.
  9. Broil until cheese is melted and slightly browned.
