These party potatoes are to die for, plus with the name, perfect for a Golden Dinner Party. A dangerous combination of cream cheese, butter, sour cream and Velveeta, blended with boiled potatoes make them irresistible to anyone and everyone. How can they not be good with that line-up? :) We are thankful to my aunt Roxie for this recipe, it is one we have enjoyed on multiple holiday gatherings. It’s served hot, it’s cheesy and so, so good.
Because of the large quantity, it’s best to mix up half the batch (half of the potatoes and the rest of the ingredients) followed by the remainder of the recipe. The recipe can be made in advance, maybe the day before, and refrigerated until you’re ready. Simply heat through either in the oven or crock pot. My mom and PC made numerous batches of this thanks to their bountiful garden, and froze them in aluminum pans. It was one of their pans that we ate at the party. Thanks so much momma!
For our party, we heated the potatoes in the crock pot and kept them nice and hot. It was the potatoes that gave off the most steam when we took them outside. :)
Ingredients
- • 10 lbs potatoes
- • 1-8oz package cream cheese
- • 1-16oz tub sour cream
- • 1 stick butter
- • 1/2 cup milk
- • 1 lb or more Velveeta
Instructions
- Boil the potatoes until tender. Drain the water and pull off the skins. (Or prep the potatoes for mashing as you see fit.)
- Place half of the potatoes and half of the rest of the ingredients in the bowl of an electric mixer. Beat until smooth and fluffy.
- Repeat with the other half.
- Place in a 9x13 greased pan, plus a greased 9x9 pan or in an large deep pan, roaster or crock pot.
- Cover with foil and bake at 350F for 45 minutes to an hour until hot. Or heat thoroughly with the crock pot.
- Can be made a day ahead and refrigerated.
