Each time my mom, sister and I get together, I can count on adding a few new recipes to my collection. We are all food nerds who enjoy finding, making and discussing homemade food and food making techniques. My sister is always trying something new, finding new resources for inspiration. My mom, the one who inspired our love, is the master of making food from scratch. Sauces, soups, canned items, breads. And, if we happen to need a fresh ingredient, there is a good chance she’s growing it. I like to talk flavor, discussing how the ingredients play together in the final flavor. Plus I like to conjure up tweaks and reworking options. I’m certain for non-food nerds it’s a snooze fest however, we like it.

Talking food is one thing but cooking together is another. Three grown women (plus a few other periphery people) cooking three entirely different dishes in a normal sized kitchen requires a few dance steps. It’s helpful we all speak our language, which others have described as confusing and discontinuous. Something about the number of topics we discuss at one time. :) Additionally, our shared DNA gives us an edge in speculating what the others might need. Super helpful when my brain forgets how to make words. I’m so thankful I get to spend time cooking with my mom and sister. It special time to me.

This kale salad is a find of my sister’s. It combines the sweetness of pears, the saltiness of the feta with a fresh and flavorful homemade dressing. MJ and I have made it four times since, making sure to share it with our friends. It’s best the day it’s made but is still good the next few days. Letting any go to waste is a travesty! Eat up!

Kale, Pear & Feta Salad

Ingredients

    Dressing:
  • 3.5 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1-2 tsp pure maple syrup
  • 6 Tbsp olive oil
  • 1 tsp oregano or basil, fresh or dried
  • pinch of sea salt
  • Salad
  • 2 bunches of kale, washed, dried and chopped
  • 1.5-2 ripe pears, sliced into small pieces
  • 4 oz feta cheese, crumbled

Instructions

  1. Whisk together the lemon juice, Dijon mustard, pure maple syrup, olive oil, oregano and salt until well combined.
  2. Pour the dressing over the chopped kale and massage it into the leaves. Allow to sit for 10 minutes.
  3. Add chopped pears and crumbles feta.
  4. Serve
