Fresh, ripe produce is my favorite part of summertime. Morning, noon and night, I eat it. I feel like I have to make up for the out-of-season times when we don’t buy it because it’s lousy. I put them in yogurt, my cereal, on toast and pair them with chocolate. Also, if the title is any indication, I use them to make deliciously flavored whipped cream.
Whipped cream is already good, especially lightly sweetened with a little vanilla extract. Adding fruit makes it just a little yummier. There are many fruit whip options. To keep with the patriotic color scheme, perfect for this week, we chose strawberries and blueberries. Strawberries are and always have been my favorite fruit while blueberries I just recently started to like but like them, I do.
I love whipped cream on pancakes. My favorite thing to do is to take a short stack of fresh pancakes, add butter, cut fruit, a dollop of homemade whipped cream and syrup. It sounds like a recipe for a coma and it is but at least it tastes good. I think I’ve made pancakes more this year than any other year but I don’t mind. It’s become a family thing. I’ve passed on my ‘pancake supreme’ creation to my children. Half of the real-food-eating ones are fans, so there’s that. :)
Ingredients
- 2 cups heavy cream
- powdered sugar to sweeten
- 1/2 - 1 tsp vanilla, optional
- 1/2 cup processed strawberries*
- 2 cups heavy cream

Instructions
- Process fresh or frozen strawberries in a food processor. If using frozen, allow to thaw.
- Using a hand or stand mixer with the whisk attachment, whip the whipped cream to a stiff cream.
- Add in desired sugar and optional vanilla. Blend in.
- Add in the processed strawberries and mix until fully incorporated.
- Refrigerate until use.
- Process fresh or frozen blue berries in a food processor. If using frozen, allow to thaw.
- Using a hand or stand mixer with the whisk attachment, whip the whipped cream to a stiff cream.
- Add in desired sugar and optional vanilla. Blend in.
- Add in the processed strawberries and mix until fully incorporated.
- Refrigerate until use.
Notes
*You can add more processed berries but it could effect the texture of the whipped cream, making it more soupy than creamy.
This whipped cream is light and slightly sweet. Perfect for topping pancakes, ice cream or for dipping fruit. I won’t hold it against you if you just want to eat it from a spoon.
It’s kept in the fridge so it’s a nice treat for a hot day too.
