After seeing Julie & Julia last summer, I became very interested in all things Julie Child. She was such an amazing woman. I checked out a bunch of her books from the library and now own my favorite of them all. (Baking with Julia)
Also from the movie, I became very interested in bruschetta like they make in the opening scene. We ate and enjoyed it so much last year and I’ve been really patient waiting for the tomatoes be “real”.

Finally, the tomatoes are good and tasty. And, that Crusty, No-Knead white bread recipe from a couple weeks back? It’s perfect for this. Especially when it’s freshly baked.

Bruschetta 

1 loaf Crusty, No-Knead Bread, cut into slices
8 medium tomatoes, seeded and cut into small pieces
2-3 cloves garlic, chopped
2 Tbsp fresh basil leaves, chopped
2 Tbsp olive oil
1/2 tsp salt
dash of ground pepper

olive oil
dash of salt
cloves of garlic

basil pesto spread

1. Toss together the cut-up tomatoes, chopped garlic and basil, olive oil, salt and pepper. Mix well.

2. In large, shallow fry pan, heat the olive oil over medium heat. Sprinkle in salt. Add bread slices.

3. Toast bread slices to your liking. Remove from pan.

4. When bread is cool enough to handle, rub one side of each slice of bread with a cut garlic clove. Discard cloves.

5. Spread basil pesto on slices and then pile on tomato mix.

Love Bug loves this, just like us. The three of us ate an entire loaf of the crusty bread because we just couldn’t stop!
