Chocolate Zucchini Cake

How does a green vegetable make a delicious dessert?

Very simply.

Chocolate Zucchini Cake

Cream together the following four ingredients:
1/2 cup soft butter
1/2 cup oil
1 3/4 cup sugar
2 eggs

Add in the following:
1 t. vanilla
1/2 cup buttermilk
4 Tbsp cocoa
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground cloves
2 1/2 cups flour
dash of salt
2 cups grated zucchini

In a greased 9×13 pan, pour in the batter.

On top, sprinkle 3/4 cup of chocolate chips.

Bake at 325° for 40-45 minutes.

UPDATE: Make into cupcakes!!

Scoop batter into cupcake liners. Divide and sprinkle the chocolate chips among the cups. Bake at 325° for 18-20 minutes.

I find it best served warm with strawberries and ice cream.

Though plain is very delicious as well.
