Fall has certainly arrived and with that, the grocery stores are full of harvested apples, ready to be eaten and cooked up all sorts of ways. This Fresh Apple Cake is one of my favorite fall desserts. The fresh chopped apples give the cake moisture and a wonderful apple taste. The dense cake is also filled with the spices of cinnamon, nutmeg and ground cloves and topped off with a caramel icing. Growing up, when my mom would make it, we would fight to have an edge piece because the topping had filled in around the cake too, so an edge piece had lots more caramel.
Fresh Apple Cake
Mix together:
2 cups white sugar
1 cup Canola oil
2 eggs
2 tsp vanilla
Then add:
3 cups flour
1 tsp soda
½ tsp salt
1 ½ tsp cinnamon
Nutmeg to taste
Ground cloves to taste
Lastly add:
3 cups fresh chopped apples
Pour mixed batter into a greased 9×13 pan.
Bake at 300° for 1 hour
Icing:
½ cup dark brown sugar
½ cup white sugar
½ butter
¼ evaporated milk
Melt butter in small sauce pan.
Add both sugar and cook until the sugars are dissolved.
Add evaporated milk.
Bring to a boil and cook for 1 minute.
Let cool and drizzle over cake.
The cake is good served warm with whipping cream or ice cream. Cinnamon ice cream is ideal.
“Served warm with ice cream” seems to be a theme with my dessert choices. But, I can’t lie.
Ice cream makes things better.
