Seems redundant.
Healthy broccoli.
It’s like saying “fattening butter” or “sugary candy”. I suppose someone could make broccoli less healthy thus the need for the distinction…but still, seems overdone. However, this recipe is called Healthy Broccoli and I’m going with it.
My mom and I came across this recipe a long time ago when we read a couple books by Andrew Weil, an integrative medicine doctor. We tried it and loved it and it’s been a part of the food line up ever since. It’s easy, fast, very tasty and yes, healthy.
Healthy Broccoli

1 large bunch of broccoli – washed, peeled, cut into bite sized pieces
If you don’t have the patience, a bag of prepared broccoli works too. However, you may need to cook it a couple extra minutes because they haven’t been peeled.
1 T olive oil
salt to taste
several cloves of garlic, chopped
red pepper flakes to taste – optional
Parmesan cheese
Place cut broccoli in a pot with a ¼ cup cold water. (I put my broccoli in a veggie steamer tray but it’s not necessary). Add in the olive oil, salt, garlic and a pinch or more of red pepper flakes, if desired.
Bring the water to a boil and cover the broccoli tightly. Steam until broccoli is bright green which takes no longer than 5 minutes.
Season with Parmesan cheese, if you like.
Delicious.
