My mom and I discussed the attributes of a good fry the other day. When I brushed off oven “fries” as equal to fried fries, I explained that to me, fried fries and oven fries are in two different potato classes. Fried fries are crispy and crunch, all need an extra sprinkle of salt and my favorite are the seasoned ones although a good waffle fry is a close second. Oven fries are different. They are a meatier and fluffier version of the potato and I like them best tossed with lots of spices and cooked with a little butter. Too much consideration for potatoes, right?
After all that jibber jabber, we don’t eat fries very often. However, when we have burgers, they are the perfect sidekick. I don’t own a deep fry so we baked up frozen fries. Unfortunately, my children like one version (shoestring) and I like another (extra crispy seasoned). Neither side is willing to compromise until now. I tossed a bag of frozen fries together with a few spices and all of a sudden, both sides were content. The crunch of the fried fries stays and the the tastiness dialed way up.
Our sussed up fries needed a good dip and I’m on an avocado kick. Avocados with my eggs, on my salad, with a spoon – all good. Turns out, fixed-up frozen fries are fab paired with g-awesome garlic avocado dip. Fresh and bright and delicious.
Garlic Avocado Dip adapted from Cafe Delites
Ingredients
- 26 oz bag of frozen fries - shoe string, steak, waffle cut
- a scant 2 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp pepper
- fresh chopped parsley
- 1 large avocado, scooped out, pit removed
- 1 Tbsp mayo
- 1 Tbsp sour cream
- 1 1/2 cloves garlic, chopped
- 2 tsp juice of a lemon
- salt to taste
Instructions
- Pour the fries into a large bowl.
- Drizzle with the olive oil and toss well to coat the fries well.
- Add the spices one by one, tossing after each addition to thoroughly disperse the flavor.
- Bake in the oven according to the directions.
- Put the avocado, mayo, sour cream, garlic and lemon juice together in a bowl. Use an immersion blender to make smooth (Or put the mix in a blender or small food processor.)
- Add salt to taste.
- Use with fries
