Part Greek, Part Italian Salad

I’ve noticed I have a bit of a sweet tooth, blog post wise at least. So I thought I would change it up a bit with a green salad topped with tomatoes. Two veggies in one!

The Greek salad is my favorite salad. The feta cheese, the dressing with a little bit of bite and the Pepperoncini peppers, the best part.

Bruschetta tomatoes are also fantastic. Basily and garlicy and good.

Over the summer, I tossed some of the tomatoes from one of the many batches of Bruschetta I made on top of one of my many Greek salads and wowza, I loved the combo.

It’s flavorful and fresh. A little bit Greek and a little Italian.

Here is the salad.

Bruschetta Tomatoes

4 tomatoes, seeded and chopped
1 Tbsp olive oil
¼ cup basil leaves, chopped
2 cloves garlic, chopped
Salt and pepper to taste

Greek Dressing

¼ cup red-wine vinegar
1 tsp salt
½ tsp oregano
Ground pepper
½ cup olive oil

Part Greek, Part Italian Salad

10 0z mixed greens
4 – 5 oz feta cheese
Bruschetta tomatoes
Greek dressing
Pepperoncini peppers

Enjoy the non-sugar high.
