A week or so ago, we gathered with friends for an end-of-the-slow-pitch-softball-season potluck (MJ plays); it was one of those perfect fall gatherings. Cool temps, children running everywhere, eating with plates in our laps, chatting with friends around a bonfire. By the end of the evening it was cold enough I was simultaneously roasting one side of myself next to the fire while the other side froze. It was a great night.
Potlucks have always been fun in my opinion. Along with the classic dishes like snicker salad and sloppy joes, there are often new dishes to try or ones you have infrequently which is a treat. And the desserts. There is invariably a plethora of desserts. It was at the potluck where I encountered these bars, made by my fantastic baking friend, the wife of one of the players. Not usually one to go for marshmallow items, I had a hankering for chocolate and this one fit the bill. To my surprise and delight, this treat had more to it than just the fluffy white parts.
These bars are so many tastes in one. Chewy brownie, fluffy marshmallow and crunchy peanut buttery chocolate. This sweet treat is why the internet should include an olfactory element. So you must, promise me, make these for yourself. You will be so happy. But just a warning, if you eat too much at one time, you could develop a stomach ache. Or so said my friend. :)
Recipe from my friends Susan
Ingredients
- 3/4 cup butter
- 1 1/2 cups of sugar
- 3 eggs
- 1 tsp vanilla
- 1 1/3 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 Tbsp cocoa
- 4 cups of mini marshmallows
- 1 1/3 cup chocolate chips
- 2 tbsp butter
- 1 cup peanut butter
- 2 cups crispy rice cereal
Instructions
- Cream together the butter and the sugar.
- Add in the eggs, vanilla, flour, baking powder, salt and cocoa.
- Spread into a greased jelly roll pan.
- Bake at 350F for 13-16 minutes.
- Remove the pan from the oven and sprinkle 4 cups of mini marshmallows over the top.
- Return to the oven for 2-3 minutes, then take it out.
- Melt together the chocolate chips, butter and peanut butter.
- Add in the crispy rice cereal and combine well.
- Spread over the bars.
- Allow to cool and then cut.
