How was your Easter weekend? Ours was lovely in so many ways. Lots of family time, great laughs, delicious food and glorious weather. The grass is showing in our yard finally! Spring might actually be on the way. Then today it’s April and April Fool’s Day nonetheless. That is a lot for one weekend.
The last couple of weeks have been harried for us. Extra long work days for MJ’s coupled with studying for a certification made for very little time for us to see each other. Not seeing MJ makes me grumpy. Plus, long days for him are long days for me at home. There was the regular life busyness, which at times seems a little overwhelming, mixed with spring nuttiness in the children and I seriously considered hopping a plane for a beach down south. We’ve also traveled the last two weekends. It’s wonderful to see family but traveling is hard work.
So folks, I am tired. Really weary. When I get tired, I like comforting things like my couch and fleece blanket, reruns and laying in the sunshine Recipes like these oatmeal cookies are comforting too. These cookies are a treat my mom made for us growing up. The smell and taste reminds me of being home with my mom, a very comforting place. Happily, we are staying put next weekend and MJ passed his test last week. And someday, probably not soon, I’ll get caught up on sleep. :)
This is a very simple write up for oatmeal cookies. A combination of butter and shortening makes a crisp outer edge but chewy center and a hint of cinnamon makes them delicious. The cinnamon is my favorite part. The children helped me make these and they will attest the batter is very good as well.
Ingredients
- • 1/2 cup shortening
- • 1/2 cup butter, softened
- • 1 cup sugar
- • 1 cup brown sugar
- • 2 eggs
- • 1 tsp vanilla
- • 1 1/2 cups flour
- • 1 tsp soda
- • 1 tsp baking powder
- • 1 tsp cinnamon
- • dash of salt
- • 3 cups oatmeal
Instructions
- In a bowl, put together the flour, soda, baking powder, cinnamon and salt. Stir and set aside.
- Cream together the shortening and butter.
- Add in both sugars and cream more.
- Add in the eggs and vanilla.
- Take the bowl with the flour mix and add it to the wet mixture.
- Finally, stir in the oatmeal.
- Scoop onto a cookie sheet.
- Bake at 350F for 9-10 minutes or until the bottoms are browned and the tops are puffy.
- Remove them from the oven and allow to cool for a few minutes on the sheet.
- Transfer to a cooling rack.
